Preparation
  1. Rub 250g cookie mix with 75g butter until crumb-like. Add 1 egg and mix until a soft dough forms. For extra flavour, stir in 100g chocolate chips.
  2. Chill the dough for 20 mins. Scoop into balls, place onto a lightly greased baking tray, and gently flatten.
  3. Bake at 200°c (180°c fan) / Gas Mark 6 for 10-12 minutes until golden. Allow to cool before serving.
